What you will need:
· 1/3 cup custard powder
· 1 1/2 cups (375ml) milk
· 1/2 cup (110g) caster sugar
· 1/2 cup (125ml) PODiSTA Supremo coffee
· 1 whole egg (separated)
In a small bowl, mix together custard powder and ½ cup of milk, set aside. Add sugar into a saucepan and heat over medium heat. When sugar begins to caramelise, add 1 cup of milk and ½ cup of PODiSTA Supremo coffee then stir well. Bring the mixture to a boil. Reduce heat to low then stir well until the sugar completely dissolves. Slowly pour the custard powder mixture in and stir slowly until the custard starts to thicken. Remove from heat and quickly whisk in the egg yolk while mixture is still hot. Whip the egg white until soft peaks form. Fold the egg white into the custard mixture and transfer to nice serving dish of your choice. Cool to room temperature and refrigerate for at least 2 hours until firm. To serve, run the knife around the edges of the custard and flip over onto a serving plate. Sprinkle some vanilla sugar or chocolate powder on top and your coffee custard is ready to serve.
